In academia, I had responsibilities as a lecturer and principal investigator (PI). As PI, I designed and secured funding for multi-year research projects where the primary output was research papers.

Formulated nutrition
Projects at the interface of food technology and human nutrition:
- Thermo-reversible protein gels for cancer nutrition
- Polyphenol-enriched sports drinks for high-performance athletes
Manufacturing operations
Projects on novel processing techniques or strategies:
- Hydrocyclones for mineral recovery from food waste
- Reversibly changing protein structure to help purify proteins with filters
- 3D printing for replicating food structures
Powder science
Projects on increasing the functionality of dried ingredients:
- Monitoring and predicting dissolution rates with acoustic methods
- Characterising the effect of composition on the flow and stability of nutritional powders
Wildcards
Projects that were a radical departure from my academic speciality, causing much confusion among the professoriate:
- Analysis of metaphors relating to food and sustainability
- Developing and applying interactive visualisations for teaching physics concepts
